Huevos Rancheros

Ingredients
- 1 AvoFresh Guacamole
- ½ brown onion, finely diced
- 2 tbsp Mexican seasoning
- ½ capsicum, finely chopped
- 400 g diced tomatoes
- 400 g kidney beans, drained and rinsed
- 4 eggs
- 4 tortillas, warmed
- Fresh coriander, to garnish
- Lime wedges, to garnish
Instructions
- Pre-heat oven to 180°C. Heat oil in a large frying pan and add onion and Mexican spice mix, cooking until softened.
- Add capsicum, tomatoes and beans bring to the boil. Reduce heat to a simmer and cook for around 5 minutes, or until thickened.
- Divide mixture into four ovenproof dishes. Make an indentation in the center of each mixture, and crack an egg in.
- Bake for 30 minutes (or slightly longer if you prefer a less runny egg).
- Serve with tortillas (heat according to pack instructions), a big dollop of guacamole, coriander, and lime.
