Chicken & Cheese Quesadilla

A Mexican-inspired recipe the whole family will love. Tortillas toasted to perfection and filled with delicious BBQ chicken, vegetables and stringy melted cheese. Topped with our delicious and creamy guacamole!

  • 1 AvoFresh Guacamole Tub
  • 2 tbsp vegetable oil
  • 400 g roasted BBQ chicken, shredded (warm or cool)
  • 1 red capsicum, thinly sliced
  • 1 yellow capsicum, thinly sliced
  • 1 green capsicum, thinly sliced
  • 400 g black beans, rinsed, drained
  • 1 cup cheese, shredded
  • 10 soft tortillas
  • 300 g mild salsa, to serve (optional)


  • Heat oil in a large saucepan over medium heat. Add capsicums and beans, and cook for around 5 minutes or until soft. Season with salt and pepper to taste.
  • Top 5 tortillas with roast chicken, vegetable mixture and a generous layer of cheese. Sandwich the filling by placing another tortilla on top of each to create a quesadilla.
  • Heat 1 tsp of oil in a frying pan over medium heat (or use a sandwich press for faster cook time). Place a quesadilla in the pan one at a time and press down firmly with a spatula. Cook for about 1 minute or until golden.
  • Lightly brush top side of quesadilla with oil, then flip and cook on second side until golden. Transfer to a plate and cover to keep warm. Repeat for remaining quesadillas. Cut into quarters.
  • Top quesadillas with big dollops of creamy guacamole and salsa to serve.
