Mexican Meatball Sub

A Mexican twist on the classic meatball sub. Juicy, handmade meatballs with Mexican spices, creamy avocado and fresh coriander.

Ingredients

Meatballs

  • 1 tbsp olive oil
  • 500 g pork mince
  • 500 g veal mince
  • 1 sachet of taco seasoning
  • 1 egg, whisked
  • 50 g breadcrumbs
  • 400 g diced tomatoes
  • 3 garlic cloves, crushed
  • ½ bunch of parsley leaves, chopped

Filling

  • 1 AvoFresh 'Smashed Avocado' Tub
  • 1 red onion, chopped
  • 1 red capsicum, chopped
  • 1 red tomato, chopped
  • 4 small dinner rolls
  • Fresh coriander, to garnish

Instructions

  • Place all meatball ingredients into a bowl & mix with hands. Roll mixture into balls.
  • Heat oil in pan and cook meat balls, turning over to brown on all sides.
  • Cut dinner rolls in half and spread avocado through centre. Top with meatballs and vegetables.
  • Garnish with coriander and cracked pepper, to taste.
