Mexican Meatball Sub
A Mexican twist on the classic meatball sub. Juicy, handmade meatballs with Mexican spices, creamy avocado and fresh coriander.

Ingredients
Meatballs
- 1 tbsp olive oil
- 500 g pork mince
- 500 g veal mince
- 1 sachet of taco seasoning
- 1 egg, whisked
- 50 g breadcrumbs
- 400 g diced tomatoes
- 3 garlic cloves, crushed
- ½ bunch of parsley leaves, chopped
Filling
- 1 AvoFresh 'Smashed Avocado' Tub
- 1 red onion, chopped
- 1 red capsicum, chopped
- 1 red tomato, chopped
- 4 small dinner rolls
- Fresh coriander, to garnish
Instructions
- Place all meatball ingredients into a bowl & mix with hands. Roll mixture into balls.
- Heat oil in pan and cook meat balls, turning over to brown on all sides.
- Cut dinner rolls in half and spread avocado through centre. Top with meatballs and vegetables.
- Garnish with coriander and cracked pepper, to taste.
