Prawn Tacos with Mango Salsa
This simple prawn taco recipe is perfect for a hot summer night. Topped with fresh mango salsa and creamy guacamole, it is bursting with juicy flavour!

Ingredients
- 600 g large prawns
- 1 tsp minced garlic
- 8 Taco wraps
- 300 g lettuce, shredded
- 1 Tub of AvoFresh Guacamole
- 1 Mango, diced
- 1 Red capsicum, finely diced
- 1 Jalapeño, finely diced
- ½ Red onion, finely diced
- 1 Lime
Instructions
- Add onion, capsicum, jalapeño, mango, and the juice of 1 lime to a bowl and mix to make the salsa. Set aside.
- Heat oil in a pan. Add the prawns and garlic and stir through, cooking evenly until golden.
- Heat the tacos according to the pack instructions.
- To serve, fill the taco wraps with lettuce, mango salsa, prawns and then a big dollop of guacamole.
