Creamy Avocado Potato Salad

This extra creamy potato salad is easy to make in only a few simple steps using our perfectly ripe and ready avocado!

  • 2 tbsp AvoFresh 'Smashed Avocado' Tub
  • 650 g baby potatoes, cut into 1" slices
  • 100 g diced bacon
  • 3 tbsp sour cream
  • Fresh chilli, to garnish
  • Fresh coriander, to garnish
  • Salt and pepper, to taste


  • Preheat oven to 180°C. Place chopped potatoes in a single layer onto a tray with baking sheet and lightly coat with olive oil and salt.
  • Place into oven and bake for 20 minutes. Add diced bacon and return to oven for 20 minutes, or until golden. Leave to cool.
  • In a large bowl, add cooled potatoes and bacon. Mix in AvoFresh 'Hint of Lemon' and sour cream. Gently toss to combine.
  • Garnish with fresh chilli and coriander to serve.
