Loaded Bean Nachos

Mexican-inspired nachos with a simple vegetarian twist! Spicy bean mix loaded with stringy mozzarella cheese and spoonfuls of creamy guacamole – yum!

Ingredients

  • 2 AvoFresh Guacamole Tubs
  • 500 g Mission Deli Style Tortilla Rounds
  • 1 tsp olive oil
  • 1 tsp minced garlic
  • 400 g can of ‘4 bean mix’, rinsed and drained
  • 3 tbsp Mexican spice seasoning
  • 1/2 red onion, thinly sliced
  • 1.2 red capsicum, finely diced
  • 3 tbsp corn kernals
  • 250 g shredded cheese (Mexican blend or Mozzarella)
  • Handful of fresh coriander (optional)

Instructions

  • Heat olive in a shallow pan. Add garlic, beans, and spice seasoning, stir well and cook for a few minutes until the beans are soft.
  • Line a tray with baking paper and cover with tortilla rounds.
  • Top tortillas with bean mixture, onion, capsicum, corn and cheeses. Bake for 15 minutes, or until cheese is golden and bubbling.
  • Serve topped with big dollops of guacamole and fresh coriander.
