Chilli Scramble Avo Toast

Creamy avocado, fluffy eggs, and the subtle heat of chilli – this easy breakfast recipe is quick to make with only a few ingredients. Serve with a side of sriracha for extra bite!

Ingredients

  • 1 AvoFresh Lime & Pepper Tube
  • 2 English muffins
  • 1 tsp butter
  • 4 eggs
  • 1 red chilli, finely diced
  • Salt, to taste
  • Sriracha
  • Lime wedges, to serve (optional)
  • Coriander, to serve (optional)

Instructions

  • In a bowl, whisk together eggs, chilli and salt.
  • Heat butter in a frypan until melted. Pour in egg mixture and allow the bottom to cook slightly.
  • Scramble the egg mixture using a spatula, repeating until almost cooked through. Remove from heat.
  • While the scramble is cooking, slice english muffins in half and toast until lightly golden.
  • Spread avocado on muffins and top with scrambled egg and a side of sriracha. Garnish with lime wedges and coriander.
