Salmon Poke Bowl

Ingredients

  • 1 AvoFresh Smashed Avocado Tub
  • 500 g salmon fillets
  • 2 cups brown rice
  • 2 carrots
  • 1 radicchio lettuce
  • 400 g hanabi soybeans
  • 1 bunch of spring onions
  • Black sesame seeds, to garnish
  • Soy Sauce, to taste
  • Salt and pepper, to taste

Instructions

  • Boil 5 cups of water in a medium sized saucepan. Add 2 cups of brown rice and leave to simmer for 35 mins. Turn off and leave the rice covered to steam for a further 10 mins.
  • Cut raw salmon fillet in bite-size cubes. Prep vegetables by grating the carrots and finely slicing the lettuce and spring onions.
  • Add rice to bowl as a base. Top with salmon cubes, Smashed Avocado, lettuce, carrot and beans.
  • Garnish with spring onion and sesame seeds. Season with soy sauce and salt and pepper, to taste. Enjoy!
