Hard Shell Tacos

Ingredients
- 1 AvoFresh Guacamole Tub
- 12 corn taco shells
- 2 tbsp olive oil
- 500 g lean minced beef
- 250 ml beef stock
- 1 brown onion, diced
- 1 clove of garlic, diced
- 1 pinch of paprika
- 1½ tsp cumin
- ½ white cabbage, thinly sliced
- 2 tomatoes, diced
- 1 lime
- 1 green cayenne chilli, finely diced
- Fresh coriander, to garnish
Instructions
- Preheat the oven to 160ºC. Line a tray with baking paper.
- Heat oil in pan and sauté onion and garlic until translucent in colour. Add paprika and cumin, cooking for 1 to 2 minutes.
- Add the beef and stir until it has browned. Pour in the stock, cover, and cook for 20 minutes, or until reduced.
- Place taco shells in over for 8-10 minutes, or until warm.
- Fill tacos with mince, tomato, and cabbage. Top with a big scoop of guacamole, and garnish with a squeeze of lime, and fresh coriander.
