Hard Shell Tacos

Wondering what to put in tacos for a classic Mexican taco night? Try these hard shell tacos with mince, chilli, coriander and guacamole!

Ingredients

  • 1 AvoFresh Guacamole Tub
  • 12 corn taco shells
  • 2 tbsp olive oil
  • 500 g lean minced beef
  • 250 ml beef stock
  • 1 brown onion, diced
  • 1 clove of garlic, diced
  • 1 pinch of paprika
  • tsp cumin
  • ½ white cabbage, thinly sliced
  • 2 tomatoes, diced
  • 1 lime
  • 1 green cayenne chilli, finely diced
  • Fresh coriander, to garnish

Instructions

  • Preheat the oven to 160ºC. Line a tray with baking paper.
  • Heat oil in pan and sauté onion and garlic until translucent in colour. Add paprika and cumin, cooking for 1 to 2 minutes.
  • Add the beef and stir until it has browned. Pour in the stock, cover, and cook for 20 minutes, or until reduced.
  • Place taco shells in over for 8-10 minutes, or until warm.
  • Fill tacos with mince, tomato, and cabbage. Top with a big scoop of guacamole, and garnish with a squeeze of lime, and fresh coriander.
