Egg Salad Pita Pockets

Ingredients
- ½ Tube of AvoFresh Hint of Lemon
- 3 hardboiled eggs
- 25 g feta
- ½ punnet of cherry tomatoes
- Handful of lettuce
- ½ cucumber
- Salt and pepper, to taste
- 2 pita pockets
Instructions
- Boil eggs for 10-12 minutes until hardboiled. Allow to cool.
- Squeeze half tube of AvoFresh into a bowl.
- Mash hardboiled eggs and feta into the avocado to create filling.
- Chop tomatoes, cucumber and lettuce, and place into a bowl. Season with salt and pepper and mix through.
- Warm pita pocket per instructors on packet (this helps to stop them cracking!) and fill with avocado mixture and salad.
