Egg Salad Pita Pockets

Creamy egg and avocado filling, paired with fresh, crunchy salad. This super quick and easy pita pocket lunch option will add flare to your usual routine!

Ingredients

  • ½ Tube of AvoFresh Hint of Lemon
  • 3 hardboiled eggs
  • 25 g feta
  • ½ punnet of cherry tomatoes
  • Handful of lettuce
  • ½ cucumber
  • Salt and pepper, to taste
  • 2 pita pockets

Instructions

  • Boil eggs for 10-12 minutes until hardboiled. Allow to cool.
  • Squeeze half tube of AvoFresh into a bowl.
  • Mash hardboiled eggs and feta into the avocado to create filling.
  • Chop tomatoes, cucumber and lettuce, and place into a bowl. Season with salt and pepper and mix through.
  • Warm pita pocket per instructors on packet (this helps to stop them cracking!) and fill with avocado mixture and salad.
