Beef Taco Bowls

Ingredients
- 1 AvoFresh Guacamole Tub
- 1 Old El Paso Stand 'n Stuff Soft Taco Kit (or large tortilla toasted in oven)
- Mexican taco seasoning (if not included in kit), to taste
- 1 cup long-grain rice
- 500 g beef Mince
- 1 red tomato, diced
- 1 lettuce, shredded
- 1 cup Mexican cheese blend, grated
- 400 mg sour cream
- 1 jalapeno, diced
Instructions
- Cook the rice for 10-25 minutes, until soft. (Tip: Use microwavable rice sachets for a quicker cook time)
- Heat oil in pan and cook beef mince until browned. Add seasoning and mix through.
- Heat the tortilla bowls or tortillas for the base.
- Place the rice and cooked beef mince into the taco bowl.
- Layer with tomato, lettuce, cheese and sourcream.
- Top with AvoFresh guacamole and jalapeno.
