Beef Taco Bowls

This juicy beef taco bowl recipe is a delicious family-favourite! Loaded with veggies, stringy cheese, sour cream and classic guacamole.

Ingredients

  • 1 AvoFresh Guacamole Tub
  • 1 Old El Paso Stand 'n Stuff Soft Taco Kit (or large tortilla toasted in oven)
  • Mexican taco seasoning (if not included in kit), to taste
  • 1 cup long-grain rice
  • 500 g beef Mince
  • 1 red tomato, diced
  • 1 lettuce, shredded
  • 1 cup Mexican cheese blend, grated
  • 400 mg sour cream
  • 1 jalapeno, diced

Instructions

  • Cook the rice for 10-25 minutes, until soft. (Tip: Use microwavable rice sachets for a quicker cook time)
  • Heat oil in pan and cook beef mince until browned. Add seasoning and mix through.
  • Heat the tortilla bowls or tortillas for the base.
  • Place the rice and cooked beef mince into the taco bowl.
  • Layer with tomato, lettuce, cheese and sourcream.
  • Top with AvoFresh guacamole and jalapeno.
