Mexican Meatball Subs

Ingredients

  • MEATBALLS
  • 1 Pack Taco Seasoning
  • 500 g Pork Mince
  • 500 g Veal Mince
  • 1 Egg, whisked
  • 50 g Fresh Breadcrumbs
  • ½ Bunch parsley leaves chopped
  • 100 ml Extra virgin olive oil
  • 400 g Diced Italian tomatoes
  • 3 Garlic cloves, crushed
  • OTHER INGREDIENTS
  • 1 Small red onion, chopped
  • 1 Small red capsicum, chopped
  • 1 red tomato, chopped
  • 4 Small dinner rolls (brioche)
  • 1 Tub, AvoFresh 'Hint of Lemon'
  • Coriander & Cracked Pepper

Method

  1. PLACE meatball ingredients into a bowl & mix
  2. ROLL mixed ingredients into balls
  3. HEAT griddle pan & COOK meat balls
  4. CUT dinner rolls in center
  5. SPREAD AvoFresh Hint of Lemon onto dinner rolls
  6. PLACE salad onto rolls
  7. ADD cooked meatballs
  8. TOP with coriander and cracked pepper
