Loaded Bean Nachos Recipe
Mexican-inspired nachos with a simple vegetarian twist! Spicy bean mix loaded with stringy mozzarella cheese and spoonfuls of creamy guacamole - yum!

Ingredients
- 2 160g AvoFresh Guacamole Tubs
- 500 g Mission Deli Style Tortilla Rounds
- 1 tsp olive oil
- 1 tsp minced garlic
- 400 g can of ‘4 bean mix’, rinsed and drained
- 3 tbsp Mexican spice seasoning
- ½ red onion, thinly sliced
- ½ red capsicum, finely diced
- 3 tbsp corn kernals
- 250 g shredded cheese (Mexican blend or Mozzarella)
- Handful of fresh coriander (optional)
Method
- Heat olive in a shallow pan. Add garlic, beans, and spice seasoning, stir well and cook for a few minutes until the beans are soft.
- Line a tray with baking paper and cover with tortilla rounds.
- Top tortillas with bean mixture, onion, capsicum, corn and cheeses. Bake for 15 minutes, or until cheese is golden and bubbling.
- Serve topped with big dollops of guacamole and fresh coriander.
