Loaded Bean Nachos Recipe

Mexican-inspired nachos with a simple vegetarian twist! Spicy bean mix loaded with stringy mozzarella cheese and spoonfuls of creamy guacamole - yum!

Ingredients

  • 2 160g AvoFresh Guacamole Tubs
  • 500 g Mission Deli Style Tortilla Rounds
  • 1 tsp olive oil
  • 1 tsp minced garlic
  • 400 g can of ‘4 bean mix’, rinsed and drained
  • 3 tbsp Mexican spice seasoning
  • ½ red onion, thinly sliced
  • ½ red capsicum, finely diced
  • 3 tbsp corn kernals
  • 250 g shredded cheese (Mexican blend or Mozzarella)
  • Handful of fresh coriander (optional)

Method

  1. Heat olive in a shallow pan. Add garlic, beans, and spice seasoning, stir well and cook for a few minutes until the beans are soft.
  2. Line a tray with baking paper and cover with tortilla rounds.
  3. Top tortillas with bean mixture, onion, capsicum, corn and cheeses. Bake for 15 minutes, or until cheese is golden and bubbling.
  4. Serve topped with big dollops of guacamole and fresh coriander.
