
Easy Mushroom Tacos Recipe
A healthy vegetarian recipe FULL of flavour and so easy to whip up. Hearty mushrooms, fresh ingredients and of course a big dollop of our creamy guacamole.

Ingredients
- 1 tbsp olive oil
- 1 small onion, finely diced
- 4 garlic cloves, minced
- 1 green Jalapeño, minced
- 6 portobello mushrooms, cleaned, stems removed and thinly sliced
- 250 g brown/chestnut mushrooms, cleaned and thinly sliced
- 3 tbsp taco seasoning
- Juice of 1/2 a lime
- Salt and pepper, to taste
- 8 mini tortillas
- 1 AvoFresh Guacamole
- Lettuce, shredded
- Handful of cherry tomatoes, halved
- Sour cream (optional)
- Fresh coriander (optional)
Method
- Heat the olive oil in a shallow pan, over medium heat.
- Sauté the onion and Jalapeño until softened. Add the garlic, mushrooms and taco seasoning and stir through thoroughly. Cook for roughly 10 minutes or until cooked through.
- Squeeze the lime juice over and season to taste.
- Heat the tortillas according to the pack instructions. Fill with the shredded lettuce and mushroom filling then top with cherry tomatoes, guacamole, sour cream and fresh coriander.
- Serve and enjoy!
