Easy Mushroom Tacos Recipe

A healthy vegetarian recipe FULL of flavour and so easy to whip up. Hearty mushrooms, fresh ingredients and of course a big dollop of our creamy guacamole.

  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 4 garlic cloves, minced
  • 1 green Jalapeño, minced
  • 6 portobello mushrooms, cleaned, stems removed and thinly sliced
  • 250 g brown/chestnut mushrooms, cleaned and thinly sliced
  • 3 tbsp taco seasoning
  • Juice of 1/2 a lime
  • Salt and pepper, to taste
  • 8 mini tortillas
  • 1 AvoFresh Guacamole
  • Lettuce, shredded
  • Handful of cherry tomatoes, halved
  • Sour cream (optional)
  • Fresh coriander (optional)


  1. Heat the olive oil in a shallow pan, over medium heat.
  2. Sauté the onion and Jalapeño until softened. Add the garlic, mushrooms and taco seasoning and stir through thoroughly. Cook for roughly 10 minutes or until cooked through.
  3. Squeeze the lime juice over and season to taste.
  4. Heat the tortillas according to the pack instructions. Fill with the shredded lettuce and mushroom filling then top with cherry tomatoes, guacamole, sour cream and fresh coriander.
  5. Serve and enjoy!
