Chilli Scramble Avo Toast Recipe

Creamy avocado, fluffy eggs, and the subtle heat of chilli - this easy breakfast recipe is quick to make with only a few ingredients. Serve with a side of sriracha for extra bite!

Ingredients

  • 1 AvoFresh Lime & Pepper Tube
  • 2 English muffins
  • 1 butter
  • 4 eggs
  • 1 red chilli, finely diced
  • Salt, taste
  • ¼ tsp sriracha
  • Lime wedges, to serve (optional)
  • Coriander, to serve (optional)

Method

  1. In a bowl, whisk together eggs, chilli and salt.
  2. Heat butter in a frypan until melted. Pour in egg mixture and allow the bottom to cook slightly.
  3. Scramble the egg mixture using a spatula, repeating until almost cooked through. Remove from heat.
  4. While the scramble is cooking, slice english muffins in half and toast until lightly golden.
  5. Spread avocado on muffins and top with scrambled egg and a side of sriracha. Garnish with lime wedges and coriander.
