FOR THE CHICKEN MARINADE

1 tbsp
Smoked or sweet paprika

1 tbsp
Ground coriander

1 tsp
Ground cumin

Garlic cloves, crushed

Lime, juice

SAUCE

1 cup
Mayonnaise

½ cup
Lemon Juice

Smoked or sweet paprika

Salt & Cracked Pepper to taste

Method
- HEAT oven to 180 C (fan forced). Wrap tortillas in foil
- MIX Chicken Marinade ingredients into a bowl
- STIR Chicken breasts into the marinade
- MIX Sauce ingredients into a bowl
- HEAT a griddle plan until very hot, char the corn cobs and rest aside
- ADD the chicken to the pan and cook for 8-10 mins
- KEEP everything moving over high heat for about 5 mins until you get a nice charred effect
- HEAT tortillas in oven for 3-4 mins
- PLACE cooked chicken onto tortilla
- TOP with shredded cabbage, charred corn and tomato
- DRIZZLE sauce over
- TOP with a generous amount of AvoFresh & fresh herbs or chillies
