Chicken Fajita

Ingredients

  • 4 large chicken breasts, diced
  • 1 Tub of AvoFresh 'Hint of Lemon'
  • 1 Jalapeno, sliced (optional)
  • 1 Red Cabbage, shredded finely
  • 2 Corn Cobs
  • 2 Tomatoes, diced
  • 8 large tortillas
  • FOR THE CHICKEN MARINADE
  • 1 tbsp Smoked or sweet paprika
  • 1 tbsp Ground coriander
  • 1 tsp Ground cumin
  • 2 Garlic cloves, crushed
  • 4 tbsp Olive oil
  • 1 Lime, juice
  • SAUCE
  • 1 cup Mayonnaise
  • ½ cup Lemon Juice
  • 1 tbsp Smoked or sweet paprika
  • Salt & Cracked Pepper to taste
  • 2 Drops of Tabasco (optional)

Method

  1. HEAT oven to 180 C (fan forced). Wrap tortillas in foil
  2. MIX Chicken Marinade ingredients into a bowl
  3. STIR Chicken breasts into the marinade
  4. MIX Sauce ingredients into a bowl
  5. HEAT a griddle plan until very hot, char the corn cobs and rest aside
  6. ADD the chicken to the pan and cook for 8-10 mins
  7. KEEP everything moving over high heat for about 5 mins until you get a nice charred effect
  8. HEAT tortillas in oven for 3-4 mins
  9. PLACE cooked chicken onto tortilla
  10. TOP with shredded cabbage, charred corn and tomato
  11. DRIZZLE sauce over
  12. TOP with a generous amount of AvoFresh & fresh herbs or chillies
