Chicken Burrito Bowl
The most delicious burrito... in a bowl! Succulent chicken strips, fresh vegetables, classic Mexican spices and a huge dollop of our creamy guacamole.

Ingredients
- 1 AvoFresh Guacamole Tub
- 2 tbsp olive oil
- 1 tsp minced garlic
- 1 brown onion, diced
- 500 g chicken, cut to strips
- 3 tsp Mexican seasoning
- 300 g passata
- 420 g black beans, drained and rinsed
- 420 g tinned corn, drained and rinsed
- 450 g long grain white rice
- Handful of lettuce
- 1 punnet of cherry tomatoes, halved
- 1 jalepeno, diced (optional)
- 1 lime, cut to wedges (optional)
- Coriander to garnish (optional)
Method
- Heat 1 tbsp oil in a frypan. Add onion and half the garlic, sauteeing until tender. Stir in the beans and passata, bring to a boil then simmer for 10 minutes.
- In a separate frypan, heat the remaining oil. Add chicken strips and sprinkle on the seasoning and garlic, then stir until well coated. Cook for 5-8 minutes until golden and cooked through.
- Cook rice according to pack instructions (we used microwavable sachets for a quicker cook time!)
- Assemble burrito bowl, adding: rice, bean mixture, chicken, corn, lettuce, tomatoes, and a big serving of guacamole!
- Garnish with jalapeno, coriander and lime wedges.
