Chicken Burrito Bowl

The most delicious burrito... in a bowl! Succulent chicken strips, fresh vegetables, classic Mexican spices and a huge dollop of our creamy guacamole.

  • 1 AvoFresh Guacamole Tub
  • 2 tbsp olive oil
  • 1 tsp minced garlic
  • 1 brown onion, diced
  • 500 g chicken, cut to strips
  • 3 tsp Mexican seasoning
  • 300 g passata
  • 420 g black beans, drained and rinsed
  • 420 g tinned corn, drained and rinsed
  • 450 g long grain white rice
  • Handful of lettuce
  • 1 punnet of cherry tomatoes, halved
  • 1 jalepeno, diced (optional)
  • 1 lime, cut to wedges (optional)
  • Coriander to garnish (optional)


  1. Heat 1 tbsp oil in a frypan. Add onion and half the garlic, sauteeing until tender. Stir in the beans and passata, bring to a boil then simmer for 10 minutes.
  2. In a separate frypan, heat the remaining oil. Add chicken strips and sprinkle on the seasoning and garlic, then stir until well coated. Cook for 5-8 minutes until golden and cooked through.
  3. Cook rice according to pack instructions (we used microwavable sachets for a quicker cook time!)
  4. Assemble burrito bowl, adding: rice, bean mixture, chicken, corn, lettuce, tomatoes, and a big serving of guacamole!
  5. Garnish with jalapeno, coriander and lime wedges.
