Mexican Chicken Burger

The perfect Mexican-style burger: Tender chicken breast loaded with chipotle, jalapeno, creamy avocado and sandwiched between two toasty buns.

Ingredients

  • 1 AvoFresh 'Hint of Lemon' Tube
  • 2 tbsp oil
  • 250 g chicken breasts
  • Bunch of lettuce leaves
  • 1 jalapeno
  • 2 tbsp chipotle sauce
  • 4 tbsp tomato Relish
  • 4 burger buns
  • Fresh rocket leaves (optional), to garnish

Instructions

  • Wash, clean, dry and slightly pound the chicken breast and cover with chipotle sauce to marinate. Place in the fridge for 15 minutes.
  • Finely slice jalapenos and rinse lettuce leaves.
  • Heat oil in pan and cook the chicken breasts evenly on both sides until cooked through and golden.
  • Slice the buns through the centre and toast until golden.
  • Squeeze avocado onto the burger base, layering chicken, jalapenos and lettuce leaves. Top with tomato relish.
