Tofu Avocado Rice Bowl

Ingredients
- 1 AvoFresh Lime & Pepper Tube
- 1 tbsp Olive oil
- 400 g honey soy tofu, firm, cubed
- 450 g long grain white rice, microwave sachet
- 200 g edamame, sheleld
- ¼ red cabbage, finely sliced
- 1 large carrot, shaved
- 1 tbsp Sesame seeds, to garnish
- 1 lime, cut to wedges (optional)
- Coriander, to garnish (optional)
Instructions
- Heat oil in a frypan and add tofu. Cook on both sides until golden.
- Cook rice (TIP: Microwave sachets are ready to eat within 3 minutes!)
- Fluff rice with a fork. Squeeze in half a tube of AvoFresh and stir through until rice evenly covered.
- Add tofu, vegetables, and extra avocado to assemble your bowl. You can use our recommended veggies, or swap them out for any of your favourites!
- Sprinkle sesame seeds on bowl, and garnish with lime wedges and coriander.
