Easy Mushroom Tacos

A healthy vegetarian recipe FULL of flavour and so easy to whip up. Hearty mushrooms, fresh ingredients and of course a big dollop of our creamy guacamole.

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 4 garlic cloves, minced
  • 1 green Jalapeño, minced
  • 6 portobello mushrooms, cleaned, stems removed and thinly sliced
  • 250 g brown/chestnut mushrooms, cleaned and thinly sliced
  • 3 tbsp taco seasoning
  • Juice of 1/2 a lime
  • Salt and pepper, to taste
  • 8 mini tortillas
  • 1 AvoFresh Guacamole
  • Lettuce, shredded
  • Handful of cherry tomatoes, halved
  • Sour cream, optional
  • Fresh coriander, optional

Instructions

  • Heat the olive oil in a shallow pan, over medium heat.
  • Sauté the onion and Jalapeño until softened. Add the garlic, mushrooms and taco seasoning and stir through thoroughly. Cook for roughly 10 minutes or until cooked through.
  • Squeeze the lime juice over and season to taste.
  • Heat the tortillas according to the pack instructions. Fill with the shredded lettuce and mushroom filling then top with cherry tomatoes, guacamole, sour cream and fresh coriander.
  • Serve and enjoy!
