
Beef Tacos with AvoFresh
You can always rely on AvoFresh to be ripe and ready for taco night. And what's a taco without avocado, are we right!?

Ingredients
- 500 g lean minced beef
- 12 corn taco shells
- 1 tub of AvoFresh (hint of lemon)
- 2 ripe tomatoes
- ½ cabbage (white)
- 1 green cayenne chilli
- fresh coriander
- 1 lime
- 2 tbsp olive oil
- 1 brown onion
- 1 clove of garlic
- 1 pinch of sweet paprika
- 250 ml beef stock
- 1½ tsp teaspoons cumin
Method
- 1. PEEL and dice the onion and garlic. Soften in 1 tablespoon of oil in a large pan over a low heat, along with the paprika and cumin, and cook for 1 to 2 minutes. Add the beef and stir until it has browned.
- 2. POUR in the stock, cover, and cook for 45 minutes, or until reduced and delicious.
- 3. PREPARE toppings, chop tomato, finely slice cabbage and open your Avofresh tub.
- 4. PREHEAT the oven to 160ºC – line a tray with baking paper and cook the taco shells for 8-10 minutes.
- 5. TOP your Taco and ENJOY
