Huevos Rancheros

The perfect brunch for anyone who loves Mexican flavours. Spice bean mix and gooey baked egg, topped with a big dollop of our creamy guacamole… this delicious vegetarian breakfast recipe really hits the spot!

Ingredients

  • 1 AvoFresh Guacamole
  • ½ brown onion, finely diced
  • 2 tbsp Mexican seasoning
  • ½ capsicum, finely chopped
  • 400 g diced tomatoes
  • 400 g kidney beans, drained and rinsed
  • 4 eggs
  • 4 tortillas, warmed
  • Fresh coriander, to garnish
  • Lime wedges, to garnish

Method

  1. Pre-heat oven to 180°C. Heat oil in a large frying pan and add onion and Mexican spice mix, cooking until softened.
  2. Add capsicum, tomatoes and beans bring to the boil. Reduce heat to a simmer and cook for around 5 minutes, or until thickened.
  3. Divide mixture into four ovenproof dishes. Make an indentation in the center of each mixture, and crack an egg in.
  4. Bake for 30 minutes (or slightly longer if you prefer a less runny egg).
  5. Serve with tortillas (heat according to pack instructions), a big dollop of guacamole, coriander, and lime.
